1. Blueberry Muffin Tops

What’s the most comforting part of a blueberry muffin? The top, of course. We partnered with our friends at The FeedFeed to create this luscious recipe with fresh blueberries and an easy streusel topping. They’re great to make with your kids, and they’re a delightful addition to the breakfast table. 

What you'll need:

Muffin
6 tbsp. butter, melted and cooled to room temperature
1/2 cup granulated sugar
1 zest of 1 large lemon
1 cup plain full fat Greek yogurt
1 egg
1 tsp. pure vanilla extract
2 cups all-purpose flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
2 packages (6 ounces each) Driscoll’s Blueberries
1 package (8 ounces) cream cheese, cut into 8 cubes

Streusel Topping
1/3 cup all-purpose flour
1/2 cup packed brown sugar
1 tsp. cinnamon
1/4 cup (1/2 stick) butter, cold, cut into cubes

For a weeknight recipe that’s both family-friendly and quick, these pulled pork quesadillas check all the boxes. Using pork tenderloin instead of a larger pork shoulder, the meat cooks to fork-tender in under 30 minutes on the stove.
